Expect the Unexpected

It’s so worth to break out of your own habits. No one limits you more than your own self. Stop the sabotage. Surprise yourself. Take a detour. Take a look around. No risk, no fun, no rain, no sun. Sometimes the things that don’t seem to match, fit perfectly together. What a delightful paradox that is.

Raw Coconut & Beetroot Chia Pudding

Ingredients:

1 can (400 ml) coconut milk

50 ml fresh beetroot juice

1/4 cup chia seeds/ 4 heaped Tbs

2 Tbs agave nectar/honey/maple syrup

1 tsp vanilla extract

To serve: a handful of berries, red currants, lemon or orange zest, fresh basil or lemon balm leaves

Preparation:

1. In a medium bowl add the coconut milk, beetroot juice, chia seeds, sweetener and vanilla extract. Whisk intensely for about 2 minutes. Put in the fridge for the next 15 minutes.

2. Take the bowl out of the fridge, whisk again and divide the mixture into prepared glasses or mason jars. Put them back to the refrigerator. Leave overnight.

3. The the pudding out of the fridge the next day, add the berries, sprinkle with some extra sweetener if desired. Garnish with herbs and/or the zest. Serve.

Serves 4-6, depending on the size of the glasses/jars.

Keeps well in the refrigerator up to 3 days.
