Refreshing Blueberry and Mint Iced Tea

Ingredients:

1 cup blueberries

2 Tbsp caster sugar (or substitute with honey)

large handful ice

handful mint or melisa leaves

couple of lemon slices

 

 

Preparation:

1. Boil the kettle and put the tea bags in a jug. Pour over 500ml boiling water and leave to steep for 5 minutes.

2. Put 2/3 cup blueberries in a jug, add the sugar and lightly crush (potato masher works best).

3. Remove the tea bags from the water, pour the tea over the blueberries and top up with another 300ml cold water. Chill in the refrigerator until cold or add a large handful of ice to cool quickly.

4. After the tea has chilled sufficiently, add a few sprigs of fresh mint, some lemon slices and the remaining blueberries. Now it’s ready to be served.
