Crunchy Sunflower Oatmeal Cookies
(When you want something. But you don’t know what that something exactly is.)
Ingredients:
- 1 cup oats flakes
- ½ cup sunflower seed, toasted (a mix of sunflower seed, flax seed and sesame seed is also a good hit)
- ⅓ cup expanded amaranth
- 2 Tbs canola oil
- 2 egg whites
- 3 Tbs coconut sugar / brown sugar / honey (note that honey burns quite easily)
- a generous pinch of salt (Himalayan is my preferred type in this case)
Preparation:
1. Preheat oven to 180°C. Line your baking sheet with baking paper.
2. In a larger bowl combine oats, seeds, amaranth, sweetener, oil, egg whites and salt. Mix very thoroughly. Leave the mixture aside for a moment to let the oats soften (about 5 minutes).
3. Spoon portions of dough onto the prepared baking tray. Flatten to form a cookie.
4. Bake for 15 minutes (middle rack of the oven).
