Marzipan-Cherry Muffins
(because it’s not always chocolate to express the taste of love)
Ingredients:
- 175 g marzipan mass, grated
- 260 g all-purpose flour
- 1 Tbs baking powder
- pinch of salt
- 115 g fine sugar
- 2 eggs
- 200 ml milk
- 85 g melted butter
- 1 tsp almond extract (or almond aroma)
- a jar of cherries in syrup
- almond flakes – to sprinkle
Preparation:
1. Preheat the oven to 180°C. Prepare the muffin tip using the paper liners.
2. Mix all the dry ingredients with grated marzipan in one bowl. Mix all the wet ingredients in the second bowl. Combine both, mixing just untill combined.
3. Fill muffin cases two-thirds full, insert 2-3 drained pitted cherries, sprinkle with almond flakes and bake for 20-25 mins, until risen, firm to the touch and a skewer inserted in the middle comes out clean.
