Healthy seed-nut-fruit truffles
(modified from this recipe: Goji Power balls)
Ingredients:
3 Tbsp dried goji berries
3 Tbsp mixed seeds (my choice: pumpkin, sunflower, sesame)
2 Tbsp dried cranberries
3 pitted dried dates, roughly chopped
3 Tbsp almonds (I sometimes make them toasted)
1 tsp maple syrup or agave syrup or honey
2-4 squares (depending on the size) of dark chocolate, chopped
dried coconut flakes or cocoa powder to cover
Preparation:
1. Combine all ingredients in a food processor and process until combined and sticky.
2. Form balls of the size of a walnut out of the batter.
3. Roll in cocoa powder (my type) or coconut flakes.
