In today’s episode I present something I like to call „a desperado meal”. ‘Cause when you’re dead tired, when everything is falling apart, when all you can do is only either laugh or cry, then you just have nothing to lose anymore. But you still have the right to have the last meal. And then you can allow yourself to have something absolutely indulging. Not too healthy. Not too modest. Not too light. Well, what the hell, you deserve something extra from this life from time to time, right? Even if it’s only some extra calories. Below you’ll find my signature recipe. It comes with a truly American verve and the bursting comfort you need at the end of a hard day.

BUFFALO CHICKEN WINGS
So many varieties of these. How to choose the best recipe? How to find that perfect one? Don’t worry about such insignificant details. The following recipe comes in handy when you’re not into fancy cooking, tired and mucho hungry without any impact on the tastiness. Thanks to About.com for the recipe.
Ingredients:
The wings:
32 chicken wing pieces (one wing makes 2 pieces – the “flat” and the “drum”)
1 Tbsp vegetable oil
1 tsp salt
1 cup all-purpose flour
The sauce:
1 1/2 Tbsp white vinegar
1/4 tsp cayenne pepper
1/4 tsp garlic powder
1/4 tsp Worcestershire sauce
1 tsp Tabasco sauce
1/4 teaspoon salt
6 Tbsp Louisiana hot sauce
6 Tbsp unsalted butter
To serve with:
celery sticks cut into 3-inch pieces
blue cheese dressing*
Preparation:
1. Preheat oven to 180°C.
2. In a bowl toss the wings with the oil and salt. Place into a large plastic bag and add the flour. Shake to coat evenly. Remove wings from the bag, shaking off excess flour and spread out evenly on a baking pan lined with parchment paper. Do not crowd. Bake for about 30-35 minutes, turn the wings over, and cook another 20 minutes until the wings are lightly crispy and browned.
2. Meanwhile mix all the sauce ingredients in a medium saucepan. Over low heat bring the mixture to a simmer, stirring occasionally, and then turn the heat off.
3. After the wings are done, transfer them to a large mixing bowl. Pour the sauce over the hot wings and toss with a spoon or spatula to completely coat.
4. ALWAYS serve with celery sticks and blue cheese dressing on the side. There still are some sanctities in this world.
*Blue Cheese Dressing Recipe
Ingredients:
3/4 cup sour cream
3/4 cup mayonnaise
1 tsp Worcestershire sauce
a pinch of sugar (optional)
1/2 teaspoon dry mustard (optional)
1/2 teaspoon garlic powder (optional)
freshly ground black pepper
1/2 tsp sea salt or to taste
100-120 g blue cheese, crumbled fine or smashed with fork into a fine paste
2-3 sprigs of chives, sliced quite fine
Preparation:
Whisk together all the ingredients except for the chives (you can also use a blender but be careful not to over-smooth the dressing, you still want to feel those chunks of blue cheese in there); cover and refrigerate for couple of hours or overnight. Add the chives, taste and adjust seasoning with salt and fresh ground black pepper.
