Don’t mess with perfection. Modify it.

Constantly seeking for the truth and the ultimate beauty. Sometimes I do want to fix something I find almost perfect. Sometimes I feel an urge to make a change. To change, to make, to fix, to break. I can’t stop myself from reaching beyond. So I found myself a little compromise. Like a win-win situation for my rebellious nature and the need for harmony.  To not ruin what is fragile and warm. I don’t mess with perfection anymore. I just slightly modify it.

Orange and Thyme Shortbread cookies

Ingredients:

1 cup soft butter

3/4 cup caster sugar

21/4 cup all-purpose flour

1 egg, room temperature

1 tsp freshly grated orange zest

2 Tbsp dried thyme

1/2 tsp salt

Preparation:

1. Cream the butter and the sugar on high speed until light and fluffy. Add the egg, mix it in.

2. Add the dry ingredients. Mix them in.

3. Work on a floured surface into two logs. Cover in plastic foil and chill in a freezer for 30 minutes.

4. Preheat the oven to 150°C. Line two baking trays with baking sheets.

5. Take the logs out of the foil, cut into 1 cm pieces, place them on the trays, sprinkle with regular sugar.

6. Bake for 25 minutes until lightly golden.

Note: Try also other combinations like vanilla-lavender or lemon-rosemary. I tried all of them and each version kicks ass!
