Every now and then there comes a time when you are totally fed up with absolutely everything and everyone – your boss, your spouse, your cat, your dog, your neighbors, your parents, your kids, yourself, your people, your strangers, your every-damn-human-being-you-could-possibly-think-off. And that’s ok. It is healthy. It’s desirable. You just can’t let pass this moment unattended. Why? Because it’s nobody’s time! It’s your reset time! It’s scream & shout & f@*k this & f@*k that & let’s make that awesome cake and eat it all by myself time! Yeah! No one saw nothing. No witnesses. No shame. No tears. And after this annihilating indulgence just gracefully drop off and pretend today has never happened.
Simple Ginger-Pear Cake

Ingredients:
175 g flour
1 tsp baking powder
1/2 tsp baking soda
200 g very soft butter
175g caster sugar
3 tsp freshly grated ginger
3 eggs , lightly beaten
400 g pears (approximately 3), cored and thinly sliced, skins on
1 Tbsp brown sugar
Preparation:
1. Preheat the oven to 180°C. Prepare the baking pan (of 22 cm diameter) with removable rim by lining a parchment paper on the bottom and buttering the sides.
2. Sift the flour into a bowl. Add baking powder and baking soda. Mix.
3. Add 175 g of a very soft butter, crumbled to small pieces , then add sugar, ginger and beaten eggs. Mix using hand mixer until a dough forms , just so the components combine.
4. Transfer the dough to the prepared baking pan and even the surface . Arrange pear slices, sprinkle with brown sugar and dot with remaining butter.
5. Bake until golden brown approx. 35 – 40 minutes. Serve warm or at room temperature.
